It all started when we realized that paying attention to our breathing, we connect with ourselves and with the time. Our minds become quiet noisy for a few moments and feel renewed. These rotulitos remind us that we must take a few seconds in the middle of our trek to be present with the moment we met.

"And ... Breathe" is what we say to each other in the Tin Jo; waiters to chefs, host to cashiers, bartender Mary. It is our way to give each other a gift to remember that our breath is always with us when we need it. And ... breathe slowly and deeply ...

We recall that our breath is always with us. We just need to take 1 minute to breathe slowly and deeply and immediately feel a relaxation.

Oil No-Trans, and not we use Ajinomoto

Another healthy note: recently changed the vegetable oil used to fry Chinese tacos, Cha Gio rolls, banana tempura and other dishes from the menu. Now we use 100% vegetable oil which in turn is trans fat free, supplied by the company INOLASA. The trans fat oil lowers the "good" cholesterol (HDL) and raise "bad" (LDL), increasing the risk of atherosclerosis. For this reason, Neuva York City took the step of banning the use of oils with this type of fat in all restaurants in the city. Although the city of San Jose has not passed such a ban, we are taking the initiative to follow the footsteps of New York restaurants.

Organic Vegetables

In the Tin Jo try to offer healthier food that we can. Therefore, we use organic vegetables when we can. To date, it has not been possible to use only organic vegetables, for lack of a supplier that could meet our requirements.

Previously worked with Alternative Trade Company, which unfortunately no longer works. Recently, we started a relationship with the company Oro Verde, with certification certifying organization BCS Öko-Garantie.

Yet we use only organic vegetables, but often we have the following organic vegetables: chard, cilantro, spinach, peppers, parsley, Boston lettuce, broccoli, and scallions.

Tin Jo Move and Relax

Many of you have told us they are happy to see our staff always in a good mood. What they do to make them happy? They ask us.

The exercises were very simple, easy to follow and are inspired by the movements of Tai Chi and Yoga.
